Magnums (1500ml) are arguably the ideal format for aging sparkling wines, allowing the full expression of maturity whilst retaining elegance and freshness. Regrettably we only made 24 of these and a mere six remain. Hand riddled, hand disgorged and hand corked in March 2025.
An extraordinarily fresh and vital 10-year-old Rosé. The five years on yeast lees, followed by a further five years maturation under cork showcases this pure, single vineyard, expression of Southern Tasmanian Pinot Noir to perfection. In the larger format the 2015 D2 Brut Rosé is both a sophisticated aperitif-style of Rosé and intensely moreish and food friendly.
Elegantly long, dry and complex, Aromas of raspberries, cranberries), ripe peach, cherry, quince, dried rose petals and herbs. A fresh, fine palate of red berry fruits, quince paste with a zing of raspberry sherbet on the mid-palate overlay savoury/umami characters derived from the 5-year sojourn on yeast lees and held fresh and tight by oystershell and forest floor characters from the 5 years spent maturing under cork.
The firm acid line and thrust of tannin compliment a lightly textured mouthfeel to give a refined, balanced palate and lingering, dry satisfyingly, moreish finish.
