Despite almost 8 years on yeast lees the second disgorgement of the 2012 Blanc de Blanc is the palest green-gold in hue. Clean and fresh as an alpine meadow with aromas of lime blossom, lemon curd, pretty white florals, crunchy green apples and savoury notes of toasted almonds and wet stones. The dosage of a mere 2.5 g/L highlights the wines delicacy and detail. With loads of finesse the palate is long and satisfying with a dry, almost saline finish. A very youthful eight year old! Drink and enjoy over the next decade or so. Especially good with any char-grilled or pan-fried white-fleshed , fresh seafood or salt-crusted pork and mushrooms.
