With a blush of palest pink rose and profusion of tiny bubbles, the appearance of elegance and delicacy in the glass is matched by the sheer finesse of the nose and palate. Toasty bakery and nougat aromas are underpinned by those of pear, lemon-custard, white stone fruit, ripe raspberry, pretty white florals and oyster shell. Subtle but taut acidity drives a gossamer, layered palate where savoury notes dance and balance gorgeous fresh red berry fruits and white peach. The finish is characteristically long, savoury - almost saline. A delicious aperitif style to linger over. Let it warm in the glass and pair with fresh seafood, grilled chicken in corn tortilla, tapas or your favourite Tasmanian cheese platter. Even after eight years on yeast lees this wine is not in a hurry and will only improve with age. Drink from now to 2032 with ease.
