2014 Triple Wild Blanc de Blanc
Composition: 100% Chardonnay (Single vineyard, N Tasmania)
Technical notes: Traditional method with wild primary fermentation in barrel, wild secondary and malolactic fermentations in bottle.
Four years on yeast lees (disgorged December 2018), 2 g/L dosage, 12.1% alcohol v/v, TA 6.87 g/L, pH 3.41, complete MLF, only 200 bottles made. Released in July 2019.
